Our Cinnamon BarkC. zeylanicum is from Madagascar and is organic. Madagascar is one of the few countries where Cinnamon grows abundantly. Harvesting is done after the rainy season when the bark is moist and rich in essential oil. The inner bark is used for the spice. Cinnamon can be toxic but the Cinnamon grown in Madagascar contains very little of the slightly toxic substance, Coumarin, and is mostly beneficial when used as a health supplement.
